I know what you mean. We've tried some egg casseroles and had luck, and put things in there like red peppers. We're also finding whole wheat or veggie noodles work, and pizza with whole wheat crust and turkey meatballs - they also like the turkey meatballs plain. We were also pleasantly suprised they liked creamed spinach - while fatty - at least they're eating the spinach. Our kids dont like much other meat, but do really like seafood, especially shrimp. Now to get them to try salmon - may try to find a recipe with something sweet on it.
Also look for things like real maple syrup and yogurt - without the high fructose sugar.
My daughter loves EVERYTHING. I spend a lot of money on the vitamin loaded foods, and "Pediasure" drinks for her in between meals, and before bed. I've noticed that after giving her this change of diet, her energy level has gone 500% up, and she's become more active on learning abilities as well. When it comes to babys, you really do get what you pay for. I am lucky to have a more than decent job that allows me to spend more money on the expensive food, but that doesn't mean the bagged vegitables are any less healthy. Stick to the basics as much as you can. give her things like peas on a plate, cut carrots, and other small things. If you want to only feed her cooked meals, make sure they are low on grease, and sugars. They should get enough natural sugars from all foods, and the grease isn't good for their bodies. fixing food for my 14 month is probably my favorite thing to do on my days off. I just hope she doesn't get too spoiled hehe.

You could lower the salt, the oil and the sugar in everything you normally eat provided you eat balanced meals
Take the jars from the gerber, food process to a mush and label those meals and stick em in the fridge thell keep for a few dayS with no preservative.
Add the seasoning to your own meals while on your plate versus in the pan or whatever. You can mush your own apple banna combination, steamed yams, potatoes, fish mush, beef mush, whatever you want to mush......CREAM OF WHEAT
THIS CAN GIVE HER A LOT OF VARIETY AND A LOT MORE NUTRITION
