It really sounds like you are giving your son all the right foods and that is what is truly most important!! I would suggest try letting him graze... meaning put food out for him to snack on where he can reach it. High carb foods, although I would stay away from sugar foods (Junk food) once you start that it's hard to get them to eat healthy food. Also, you might check with your doctor because there are shakes that you can buy that will add some weight and also have good vitimins as well... Pedisure is one of them. Good Luck.
Your baby should be getting a lot of fats just now from foods such as cheese and butter, a diet that is suitable for an adult is not suitable for a toddler, he should be eatting things like pasta with cheese sauce, bread and butter, snacking on pieces of cheese with fruit and mashed potatoes with plenty of butter. My baby normaly would have wheetabix or porridge with full fat milk, fruit and a biscuit for a snack, french toast or scrambled egg with cheese, toased cheese with beans for lunch followed with a yogurt, a snack of a biscuit, toast or fruit then pasta with meat and veg or macaroni cheese, sausage and mash with gravy or rice with meat or fish and veg. He also gets a cup of formula before bed. Fruit and veg are not as important as you may think, it it more important that their diets are varied and contain carbs and fat as well as fruit and veg, especially milk and cheese because they are so good for them. Avocados, cheeses, yogurts, etc. But, if your doctor doesn't seem concerned, you shouldn't be, either.

Skinny isnt unhealthy, but cholesteral and fat is. He will be fine. My daughter was always considered underweight and I was always concerned about it but now shes 21 and beautiful.
Full fat milk (or breastmilk if breastfeeding), full fat cheese and full fat yogurt (not sweetened) are all good for toddlers of that age. The balance of food a toddler is meant to eat is a bit different from an adult. They need more cereals and full fat dairy products in their diet than we do. I was also told you could sprinkle a bit of powdered milk into their food if concerned about how much dairy products they're getting but didn't try that myself. Meat, fruit and veges are important too of course, but are not as large a part of a healthy toddler diet as they are for adults. They need the calcium because they're growing and the fat for brain development.
My son is also lower than average weight, about 11 kilos at age 2. I make sure he's eating right but I've given up being too worried about it because he's healthy, active, meeting all his development milestones and he has a very lean father influencing his genetics!
If he is seriously underweight then I'm sure that the doctor would have given you advice. If he didn't and you are truely worried then you should call and ask instead of seeking advice from the weirdos on Yahoo Answers. I'm sure that extra butter is not the best way. Look for foods high in carbs and protein, not fat.
Is he drinking whole milk? That'll fatten him up! Even if you are still breastfeeding, you can supplement with the milk. It worked great for my daughter, she gained two pounds! Dairy in general is healthy fat. You could try baby yogurt, and hard cheeses if it doesn't hurt his tum - tum.
Give him foods that are healthy, but have natural fats in them. Like salmon, cheese, yogurt, whole milk.....anything else you can think of that has natural fat. You don't want to just fill him up with unhealthy foods, choose healthy ones.
you may want to add something like carnation instant breakfast or nesquick to his milk. they have a some extra calories in them. leave plenty of healthy snacks out for him to munch on throughout the day. give him full fat dairy products. maybe you could start giving him ice cream a few times a week as a treat since the weather is getting warmer. My son loves cheeseburgers...and has been asking for them lately.
