Recipes for family?

I'm after recipes to feed adults children and toddlers, that are healthy, cheap and can be cooked ahead of time or quickly.

Let me know your old faithfuls that gets cooked regularly...


It SO depends on the preferences of your family. Toddlers often don't like their food to touch or don't like food mixed - like a casserole.

So...I do -

Spaghetti - browned hamburger, pasta and Prego organic garden sauce.

Chili - browned ground turkey tossed in a crock pot with kidney beans, corn and a jar of Prego organic garden sauce - yes, we eat a LOT of this! Cook all day with spices you like (taco seasoning, chili powder, salt and pepper, etc.)

Curried veggies - cut up potatoes, onions, yams, carrots, celery, and mushrooms and put in a glass pan with olive oil and curry. Top with chicken thighs - salt and pepper. Bake at 350 for 2 hours. Our FAVORITE! (and everyone can pick out what they like)

Spicy Dhal - put lentils and water in pot (4 x water to lentil ratio) and let it simmer four hours. Then add onions, carrots and 1 can of rotel (tomatoes with spicy peppers). Salt and pepper to taste. It takes a long time to cook, but it's not a lot of work.

Chicken soup - boil chicken in water and add Better Than Boullion chicken flavor, carrots, celery, green onions, and whatever other veggies ya'll like. Add salt, pepper and poultry seasoning. Simmer all day. Great when it's nippy out.

Our kids also like make your own taco night and tapas night - where we just put out a bit of whatever's left - black olives, marinated artichokes, dalmas, dhal, soup, etc. It's really just left-overs, but when you call it tapas they think it's exotic and are more likely to eat it!

Getting healthy, cheap and cooked early is a tough question especially as we don't know your families likes/ dislikes. Anyway there are a good selection of recipes at the source below which should cater for all your needs. There is even a video from a qualified chef showing you step by step guidelines on creating the masterful recipe.

Anyway good luck- i'll let you search the food types that you require!

easy bbq chicken:

purchace a bunch of chicken drum sticks.

Put them in a slow cooker with honey and bbq sauce. all day on medium heat.

easy italian sausage: purchace some italian sausages. Put them in the slow cooker with marinara or spaghetti sauce. with 1/2 cup water, 1 onion, 1 green bell pepper. salt and pepper. all day the sausages get tender.

All of the below are pretty simple to make and economical too. some of them can be made ahead of time, frozen, and then thawed and reheated when dinner comes like beans. Check out the rest of the site there may be other recipes that strike your fancy.

MEXICAN CASSEROLE

1 16 oz container sour cream

1 8 oz pkg cream cheese

2 eggs

2 cans cream of chicken soup

1 large onion, chopped

1 small can olives, chopped

1 small can chopped green chiles

1 cup cooked chicken, tuna, or turkey, chopped

1 8 oz pkg Monterey Jack or Cheddar cheese, shredded

Mix together sour cream, cream cheese, eggs, cream of chicken soup, chopped onion, olives (optional), green chillies, chicken, tuna or turkey (add more than called for if desired).

Spread mixture evenly in a 9x13 pan glass or earthenware casserole dish.

Top with shredded cheese.

Cover and bake 1 hour 350 degrees. Can be frozen and cooked later or cooked and reheated.

A metal 9x13 pan takes longer to cook than a glass one, so bake it slightly longer if you use a metal pan.

Mixture should be set well when removed from oven.

BAKED ZITI CASSEROLE

16 ounces ziti pasta

1 pound Italian sausage links

2 medium carrots, cut into 1/2" slices

2 medium celery stalks, cut into 1/2" slices

1 medium onion, chopped

1 1/2 cups milk

2 tablespoons flour

28 ounces tomatoes, canned, crushed

1 teaspoon sugar

1/2 teaspoon dried basil

1/4 teaspoon pepper

16 ounces mozzarella cheese, shredded

celery leaves, for garnish

In saucepot, prepare ziti macaroni as label directs for minimum cooking time and do not use salt in water. Drain ziti and return to saucepot.

Meanwhile, remove casings from Italian-sausage links. In 12-inch skillet over medium-high heat, cook sausage meat until well browned, stirring occasionally to break up sausage. With slotted spoon, remove sausage meat to bowl.

Preheat oven to 375 F;. In drippings remaining in skillet, over medium-high heat, cook carrots, celery, and onion, stirring occasionally, until vegetables are golden and almost tender.

In 2-cup measure or medium bowl, with fork, mix milk and flour until smooth; stir into vegetable mixture in skillet. Add crushed tomatoes, sugar, dried basil, and pepper; over high heat, heat to boiling. Reserve 1 cup shredded mozzarella for topping. Into cooked ziti in saucepot, stir vegetable mixture, sausage, and remaining mozzarella cheese. Spoon mixture into deep 3-quart casserole; sprinkle with reserved mozzarella cheese.

Bake casserole, covered, 15 to 20 minutes until cheese melts and mixture is hot and bubbly. Garnish with celery leaves. Makes 8 main-dish servings.

Serving Size: 8

TUNA NOODLE CASSEROLE W/CHEESE

2 cups of uncooked elbow macaroni

12 ounces of tuna in spring water

2 small cans of concentrated cream of chicken soup

1 small can of sweet green peas

1/2 cup of milk

1 small pack of shredded mozzarella cheese

In a medium pot, bring 6 cups of water to a boil. Once boiling, add noodles. Let cook until noodles are tender.

Preheat oven to 350.

Flake tuna in a casserole dish. Then add in soup, peas, and milk. Mix all ingredients till they are blended well. Then add an even layer of cheese across the top.

Bake for 20-30 minutes. Serve hot and enjoy.

Our favorite family style meal is fondue. You can get fondue pots at thrift stores for just a few dollars. We make an alfredo or spagetti sauce in the pot, and have a variety of dunkers like rosemary steamed new potatoes, brocolli, mozzerella cheese bites (just cut the string cheese into bite size pieces) garlic bread, tater tots, cherry tomatoes, etc. I put out a big platter of the dunkers and everyone can "cook" there own by putting a piece on a long fondue fork and dipping it in the sauce. You can vary the sauces and dunkers according to taste. Even the toddlers love this way of cooking. I have been doing it with my daughter since she was old enough to talk. We still enjoy it on a regular basis. I like it because all I have to do is heat up a sauce, and steam a few veggies (can be done in microwave, too) Cleanup is quick and easy. We are vegetarian, but you can use chicken nuggets, meatballs, etc for dunking too

Taco Pie!

Quick and easy!

Line a pie pan with unrolled and stretched crescent rolls, covering the whole pan. Crumble Doritos (nacho cheese I find the best.) onto the crescents. Brown 1 lb. ground beef. Drain. Add 1 taco seasoning and prepare as directed. Pour meat into pie pan. Spread 1 container sour cream (the usual size.) on meat, top with shredded cheddar, making sure you cover the sour cream. Top cheese with crushed doritos. Cook according to crescent directions. Tada. A nice tasty meal that the whole family likes. This feeds my family of 4 fine. also like to top it with lettuce and tomatoes, and sometimes I add black olives to the sour cream level. You can also make the beef ahead of time (like when you brown meat for spaghetti) and freeze it. Just defrost and cook as directed.
